Account data is stored on the EA account and not the platform account.

This is why you won't be able to access your PlayStation progress if you relinked it to a different EA account.

Once cross progression rolls out, your PlayStation and Xbox account should merge without any issues.

You'll be able to access the progress that you had on Xbox once it rolls out, though keep in mind that any progress that you make on PlayStation before the merge happens will not be merged.
