Hey @Tripplesz

The settings for your game are stored locally on your storage device, this means that settings will transfer over.

Data for what you've unlocked isn't stored on your device, instead it's stored on their server, so unlinking your account can result in that data being lost.

I'm personally not well versed with the system on how to link your account, though isn't it possible to have your EA account linked to both Steam and Origin at the same time?
