While we're seeing some similar issues on PC, I haven't seen nearly the same level of reports about this on Xbox. There are a few troubleshooting steps that may help out with that in mind.
First I'd double-check that you're on the latest version of Apex. While Xbox will typically auto-update, we do want to make sure the update was fully installed and didn't get interrupted partway through. You can check this under My Games & Apps > Manage > Updates to be sure Apex isn't showing up with one still available.
Beyond that point, these steps can help clear up issues with cached or corrupted data or a connection that may contribute to the crashes you're seeing.
Power cycle your Xbox
-Hold the power button on the console for ~10 seconds until it shuts off
-Unplug it for about 60 seconds
-Plug it back in and turn it on
Clear Alternate MAC Address
-This option is found at: Settings > General > Network settings
-Open Advanced settings > Alternate MAC address > Clear
Note that you may need to reconnect to WiFi after this step, though if you're able to use a wired connection for testing purposes that's usually a solid thing to check in these situations as well.
Delete local saved data
Your progress itself is stored at the EA account level and not in your local save data, so this will not impact your progress. You may need to re-do any settings in-game that were changed however, as this is essentially clearing the configuration files to make sure nothing's been corrupted.
-Start at My Games & Apps > Apex Legends
-Press the Menu button > Manage game & add-ons > Saved data
-Select your profile > choose Delete from console
