The Quest Progress Stays, the Currencies and Collectibles stay, and you can even use some of the stuff back home (Lightsabers for example; Assuming your sparring partner also has one), so yeah progress is saved; in fact I believe the /intended/ meta is to treat Star Wars like a "Theme Park" Trip, so doing it in spread out chunks makes sense to be honest.
