Apex cross progression
I made this EA account years ago before cross progression and the transferring of stats and skins. Is it possible to unlink my Xbox account from this EA account and re-link it to my main EA account now on PC and still keep my Xbox stats and cosmetics?

I'm afraid what you're mentioning is not possible. Unlinking your Xbox would simply cause you to lose access to the content here. It would not copy that over to a different EA account.
Progress is stored on the EA account level, not on individual platforms like PlayStation, Xbox, Steam, etc. This means if you link your platform to a different EA account, you'll lose access to that progress and simply be able to access whatever progress is on the new EA account. Progress cannot be transferred between different accounts.
