Have you already tried to update ICUE?
This can be done by launching corsair ICUE and going to settings.

If that didn't work repair EAC by going into C:\Program Files (x86)\Origin Games\Apex\EasyAntiCheat
Launching:EasyAntiCheat_Setup.exe and click repair wait till it says finish and try to launch Apex Again.

Let me know if that changed anything.

Can you try to clean boot and see if this issue is still popping up?

If that didn't do the trick, you might want to reinstall the ICUE app.
Make sure you export your profiles when you try this step.
