Progress is stored on the EA account level, not on individual platforms like PlayStation, Xbox, Steam, etc. This means if you link your platform to a different EA account, you'll lose access to that progress.

In this case if you have an EA Account with your Xbox linked and another EA Account with your PS5 linked, the EA Account with that Xbox profile should have your progress as you haven't yet made progress on PlayStation.

That would mean you'll need to link your PSN account to the same EA Account as your Xbox - not move your Xbox to the account with your PSN. 

You should be able to try these steps to link an account, though if you run into any trouble with the linking process please reach out to support so they can help get the platforms on the same/correct account.
