Cross-Progression
I had my EA account originally linked to my PSN; however, when Apex implemented cross progress on the game, my account was linked to a random players content (nothing related to any of my previous accounts and this player even had heirlooms for legends I never played). I received in game items that were linked to their account. I would also not be able to log into the game as it would say that I cannot be logged into two different devices (despite only being on one). Then two days after this occurred, it asked me to re-log into my EA account when I went to play Apex on the PS5 and in doing so, it replaced my level 800+ account with my level 50+ account on my PC. Despite me logging in with the same credentials. It seems that my level 800+ account cannot be recovered and I have lost numerous progress, cosmetics, and heirlooms. This issue originally occurred in January and has yet to be resolved sadly despite numerous attempts.

Progress is stored on the EA account level, not on individual platforms like PlayStation, Xbox, Steam, etc. This means if you link your platform to a different EA account, you'll lose access to that progress.
When Cross Progression went into effect, it only would have pulled content from platforms linked to the same EA account. There is no way to transfer or merge progress between separate EA accounts.
In this case, it looks like the PSN linked here was only linked at the end of last year. It sounds like you'd played prior to that if you have a level 800+ account, so that must have been while the PSN was linked to a different EA account.
This would be why you're not seeing that content on the current account. When you logged in again back in January, it was to this same account however this wasn't the account with your original PSN progress. You would need to try locating whichever EA account had your PSN linked before that point and re-link it there instead to try restoring access to any missing content.
