Connecting that platform to this EA account would be what's caused that progress to be lost. Progress is stored at the EA account level and cannot be transferred or moved to other accounts.
In this case, it looks like you had different Xbox and PSN accounts that were unlinked from this account a couple years past, with separate ones being linked here afterwards (and currently). Additionally, it looks like the EA account you're posting with had never launched Apex on any platform until recently.
That would indicate that while you've used your Xbox to play Apex in the past (per your mention), it was linked to a different EA account at the time. That's the account that would have your progress as well, so you'd need to link any platforms you plan to use back to that original EA account to try accessing the progress.
